Artisanal fleur de sel is a thin natural salt layer that forms on the surface of seawater during the evaporation process in crystallization ponds. Its harvest is seasonal and limited to the months of April and May.

It is collected manually using a fine mesh sieve following traditional harvesting methods. After collection, the salt is aged for approximately one year to allow natural moisture loss, resulting in light, delicate crystals with a refined texture, highly valued in professional gastronomy.

It contains natural marine minerals such as calcium, iron, magnesium and trace elements derived from seawater, and is widely used to enhance flavors without overpowering them.
