Conservation and storage
Store in a cool, dry place, protected from direct light and heat sources, keeping the product properly sealed to reduce the absorption of ambient moisture. Avoid prolonged exposure to air and significant variations in temperature and humidity, as they can modify its texture, cause clumping, and reduce its sensory quality. Always handle with clean and dry utensils.
Quality and Selection Criteria
The product must present characteristic cubes, with relatively uniform coloring and chili coverage, a fruity-spicy aroma, and a firm and chewy texture. Avoid product with abnormal moisture, fermentation, off-odors, excessive hardening, visible contamination, or the presence of mold. Moderate variations in size, shape, and surface coverage are inherent to the product.
Labeling for sale in Mexico
Due to its formulation with added sugars, this pineapple must undergo a nutritional assessment to determine the corresponding warning seals. If the product's analytical values exceed the limits established by NOM-051 for energy and sugars, it must frontally display the "EXCESS CALORIES" and "EXCESS SUGARS" seals under the identification of the SECRETARÍA DE SALUD (Ministry of Health). The presence of salt also makes it necessary to evaluate the sodium content to determine if "EXCESS SODIUM" additionally applies. The applicable seals must not be assigned solely based on the presence of an ingredient, but rather based on the nutritional profile of the product. DOF
NOM-051 establishes an exception for foods sold truly in bulk, that is, those that are weighed, measured, or counted in the presence of the consumer and are not prepackaged at the time of sale. Sidof
Origin
Thailand
The dehydration of pineapple considerably decreases its water content and concentrates its components, producing a denser and chewier texture. In this presentation, the incorporation of sucrose, citric acid, chili, and salt creates the sweet, sour, salty, and spicy contrast characteristic of chili-coated fruits. Sulfur dioxide is used in dehydrated fruits as a preservative and to help control undesired color changes, while Yellow 5 (Tartrazine) and Yellow 6 are added colorants used to provide a more uniform appearance to the product.
